For Christmas Eve I made these peppermint oreo cookies by recommendation of my friend, Lauren. If I'm being totally honest, I'm not the biggest mint fan (unless it's gum or mint chocolate chip ice cream), but I knew that my family would like these, and I was definitely not wrong there. I changed up the recipe from white chocolate to vanilla, and I used different oreos (just the normal ones, not the winter oens with red cream), but they seem about the same as the original recipe.Ingredients:
// 1 C crushed oreos
// 8-10 full-size candy canes
// 1 C vanilla (or white chocolate) chips
// 1 C butter
// 3/4 C brown sugar
// 1/4 C granulated sugar
// 1 box vanilla (or white chocolate) Jell-o pudding
// 2 large eggs
// 1 tsp. vanilla extract
// 2 1/2 C flour
// 1/2 tsp. salt1// Blend together the butter and sugars until smooth.
2// Add in pudding mix, eggs, and vanilla.
3// Mix in the flour and salt.
4// Fold in candy canes, chips, and crushed oreos.
5// Drop onto baking sheet (I smushed mine down a bit and tried to stick oreos and candy out of the tops).
6// Bake for ten minutes on 350*F (They might not seem cooked, but they will continue to cook after they're taken out. You can do them for longer if you prefer a more well-done, crispier cookie).These took a little while to make just because of all of the extra stuff that goes into them at the end, but I got great reviews on them. They also made the kitchen smell amazing - mint + freshly baked cookies = Christmas.These are a heavy cookie for sure, but the perfect winter treat if you love a bit of mint, I think.
